Yeast-Mediated Nicotinamide Riboside Production in Craft Beers: Preclinical Findings
Synopsis
Researchers measured nicotinamide riboside (NR), NAD+, and NMN levels in commercial and lab-scale beers. All beers contained NAD+, but NR and NMN were only found in beers made with certain Saccharomyces cerevisiae strains. In lab experiments, adding hops during fermentation significantly increased NR production, but only when both yeast and hops were present. This suggests that hops and yeast interact to boost NR formation, providing a basis for further studies on enhancing NAD+ precursors in fermented beverages.
